Cheval Blanc Paris seeks a Sommelier (CDD) in Paris — manage cellar, provide expert wine service and curate pairings for a Michelin-level dining experience.

Role & Responsibilities

  • Advise and guide guests through the wine and spirits list, tailoring recommendations to individual preferences and the menu.
  • Execute refined wine service at the table, ensuring correct decanting, presentation and temperature control.
  • Design and maintain harmonious food-and-wine pairings in collaboration with the culinary team.
  • Manage cellar operations including stock control, receiving, storage conditions and regular inventories.
  • Contribute to the evolution and curation of the wine list, sourcing new references that reflect guest tastes and the restaurant’s culinary direction.
  • Promote premium products, bespoke services and gastronomic events to enhance guest experiences and commercial performance.
  • Ensure compliance with hygiene and conservation standards for all beverage stocks.

Qualifications

  • Vocational diploma in hospitality/catering: BEP, CAP or Bac Pro Restauration (or equivalent).
  • Proven experience in luxury hotel or Michelin-starred restaurant service.
  • Strong commercial aptitude with demonstrated upselling and guest communication skills.
  • Fluent written and spoken English; mastery of a third language (Arabic, Russian, Chinese or Portuguese) is highly valued.
  • Familiarity with hospitality IT systems: Pack Office, Micros and La Fourchette.

Experience

Minimum 3 years' experience in wine service within a luxury hotel or starred restaurant of equivalent standing.

Education

BEP/CAP/Bac Pro in Hospitality, Catering or Restaurant Service (or equivalent vocational qualification).
