Belmond — Rapallo: Culinary Intern (Hotellerie). 400‑hour LVMH Institute apprenticeship including classroom training, masterclasses and stage placements at Belmond hotels.

Overview

Role & Responsibilities

  • Attend and participate in 400 hours of combined theoretical and practical training at Belmond Academy in Rapallo, including English language classes tailored to hotellerie.
  • Complete a specialist culinary curriculum comprising hands‑on kitchen training, mise en place, basic cooking techniques and food hygiene practices.
  • Undertake an in‑company stage placement at a Belmond property in Italy or abroad (e.g., Hotel Caruso, Splendido, Cipriani, Reid's Palace) to apply learned skills in a five‑star environment.
  • Participate in LVMH Institute Master Classes and brand‑focused site visits delivered by recognised industry professionals.
  • Collaborate with brigade teams during service, adhering to kitchen standards, recipes and plating specifications.
  • Demonstrate professionalism in guest interaction and support front‑of‑house when required to ensure seamless guest experience.

Qualifications

  • Preferably a secondary school diploma (high school) or equivalent.
  • Eligible candidates include unemployed, inactive individuals or early‑career candidates seeking first professional experience.
  • Basic to good command of English appropriate to the course level; willingness to engage in English training.
  • Foundational knowledge relevant to a culinary profile (basic cooking or kitchen exposure preferred).
  • High motivation, strong communication and interpersonal skills, reliability, autonomy and results orientation.
  • Willingness to relocate to regions where Belmond properties are located for the stage placement.
